This Tropical Fruit Salad with Mango Whip is a cool, colorful treat made for sunny days. Juicy scoops of mango, dragon fruit, kiwi, papaya, watermelon, and pineapple are chilled and drizzled with a bright honey-lime dressing. It’s all served over a creamy, dreamy mango whip blended with frozen mango, coconut milk, and vanilla ice cream. Ingredients
1 mango, peeled
1 dragon fruit, halved
1 kiwi fruit, peeled
1/2 papaya, seeds removed
1/2 mini seedless watermelon
1/2 pineapple
2 Tbs Nature Nate’s® 100% Pure Raw & Unfiltered Organic Honey
1 lime, zest and juice
1 (12 oz) bag frozen mango (see note)
3/4 cup canned unsweetened coconut milk
2 scoops Goldenbrook Vanilla Ice Cream
Directions
  1. Use a melon baller to prepare the fruit, and/or cut the fruit into pieces. Chill the fruit until ready to serve. Combine the honey, lime zest and lime juice. Set aside.
  2. Blend all of the mango whip ingredients until smooth. Transfer to a bowl. Freeze for at least 30 to 45 minutes. Divide into four servings. Top with the fruit, and drizzle with the honey mixture.

 

Note: Keep the mango fully frozen for the whip. If using fresh mango, freeze it solid before blending.
